Rain, shade trees, and a long wait

Coffee grows slowly under other trees, in the hills of Karnataka and Kerala, where the mist arrives before the light does. We select from those established growing regions.

Coffee is a fruit before it is a bean

What gets roasted is the seed of a red cherry. Skin, pulp, parchment, seed. Everything before the roast is the work of removing three of those four.

We roast in the shop. For bulk orders we roast after the order arrives, because a roast is only worth doing close to the cup it ends up in.

The filter

Then nothing happens for twenty minutes

Powder in the upper chamber. Hot water over it. And then the part no machine improves: waiting, while the decoction finds its way down, one drop at a time.

Sundaram Coffee Works opened on 13 May 1943 and has not moved. We roast, blend, grind and pack it ourselves, and more than 5,000 customers buy it every month.
